How we make NA wine

There's lots of different ways of making non-alc wine. We looked closely at all of them before settling on our own approach. From 'wines' that are never fermented (more like a tea) to the various industrial technologies that force out alcohol—there's different methods that offer different results. What we found was that there's no substitute for a wine that's actually the result of an alcoholic fermentation: there's magic in the flavors that form when grapes are allowed to do what they naturally want to do. Our job has been to figure out the kind of wines that best combine with the right type of de-alcoholizing process, to allow the flavors and textures of wine we like, to come through intact. This is all very new, and like all vanguard activities, required a lot of trial and error. What we eventually realized, however, was that the gentlest process was the best for us: nuance, personality and prettiness in the wines was not lost when the right kinds of aromatic wines went through gentle vacuum distillation at low temperatures and patented aroma recovery processes worked to preserve as much of that wine magic as possible from the alcohol we were taking out.

Remember, our goal is to make something that we loved drinking. Several decades of 'wine' has shown us that when you make something you love, other people will love it too. The good news for us is that we found a way to make something special that felt and tasted like the bubbles we wanted. Through careful selection of the right wines, made to highlight the right characteristics, and thoughtful employment of the best NA technology, we've been able to find a launching point for the next iteration of West & Wilder.
